ONE FARM-FRESH MEAL AT A TIME
Cory & Erica Shupe had a vision to show the Quincy community that farm-fresh food doesn't need to be fancy, pretentious or expensive. After 10 years of serving local, casual cuisine to the area at their award-winning Thyme Square Bakery & Cafe, the Shupes are branching out to show that slow-cooked food can also be served FAST!
A brief history of Thyme Station's development
In the summer of 2019, The Crossing approached the Shupes about their plans to fully renovate their 48th street campus and convert it into a community center. It was their hope to include a restaurant in the new space, as well as, a variety of other businesses such as a police substation, preschool, in-door playground and outdoor atrium. They felt that the Shupe's business model, business practices, and hours of operations aligned perfectly with their vision and made a very generous offer to entice them to open a second location within the newly renovated complex.
"When we opened Thyme Square in 2010, we wanted to show that farm-to-table food did not have to be fancy and could be used for everyday breakfast and lunch items. For our second location, we would like to also show that farm-to-table food, while cooked long and slow, can be quick and convenient for the consumer. After much research and deliberation, we have developed and implemented the newest technologies and are very excited to provide the entire community with a local, whole foods option within the quick-service food scene," says Erica Shupe.
Although Thyme Station is a separate business entity with a different twist on breakfast & lunch than Thyme Square, the space provided has been modified and renovated to honor the look and feel the Shupes are known for. "We are committed to offering the public the same great service and high quality food that we have built our brand upon and cannot wait for you to experience the next chapter in our business development," states Cory Shupe.
The renovations The Crossing have done to the community center are truly amazing. Thyme Station's space has the capacity to seat 75 people and throughout the complex, there are multiple seating areas including a beautiful outdoor atrium where guests are invited to take and enjoy food from the restaurant. While The Crossing is Thyme Station’s landlord, Thyme Station belongs 100% to the Shupes and is always open to the public. In no way is Thyme Station religiously affiliated with any church and everyone is always welcome.
