In 2009, Chef Shupe began reaching out to area farms to gauge interest in their support of a new, farm-to-table restaurant. Chef Shupe wanted to observe all farming practices, taste the quality of the products and determine whether the farm would be able to produce enough to sustain a large amount of people on a regular basis. The farmers needed to know that if they produced more product there would be a reliable buyer. Trust on both ends is essential for a healthy affiliation and the Shupes have worked diligently with several area farms to build confidence and maintain mutually beneficial partnerships.
When people comment on how much they've enjoyed the food, the Shupes are quick to note that they could not have done it without the hard work and dedication of the farms they support.
