In 2009, Chef Shupe began reaching out to area farms to gauge interest in their support of a new, farm-to-table restaurant. Chef Shupe wanted to observe all farming practices, taste the quality of the products and determine whether the farm would be able to produce enough to sustain a large amount of people on a regular basis. The farmers needed to know that if they produced more product there would be a reliable buyer. Trust on both ends is essential for a healthy affiliation and the Shupes have worked diligently with several area farms to build confidence and maintain mutually beneficial partnerships.

When people comment on how much they've enjoyed the food, the Shupes are quick to note that they could not have done it without the hard work and dedication of the farms they support. When food is grown with love, prepared with passion, and presented with pride, the end result is truly food for the soul.

He has planted items specifically for Thyme Station/Thyme Square's use and is their top source for local produce throughout the year.

Grassy Hill Farm is operated by the Hochstetlers: Miriam, Jacob and their children. They produce naturally-bred chickens, eggs, and Thanksgiving turkeys. The chickens and turkeys are raised on 100% organic and non-GMO feed which they grow themselves on the farm. The chickens and turkeys are raise on pasture using the Joel Salatin-method. Trent Farms is owned and operated by Dan Trent with help from his wife, Kim. Their hogs are all-natural & raised in a small farm setting without the use of unnecessary antibiotics or growth hormones. Dan & Kim take pride in raising healthy, happy hogs and provide at least 4 full hogs to Thyme Station/Thyme Square alone, each month. All of their pigs are pasture-raised with supplemental feed produced on the farm.
